Happy Bump Day! Our gender reveal cake was such a hit a few weeks ago and we had such a blast sharing our exciting news! This cake was delicious and would be perfect for gender reveals, your little ones birthday party or even Valentine’s Day!!! The possibilities are endless. 🙂
When it comes to baking, I like to start from scratch (but unfortunately time just did not allow) so I was a bit skeptical using a store-bought cake mix and frosting, but I was pleasantly surprised. You can seriously add any type of edible sprinkles and candy to the center, in all sorts of colors. It’s actually pretty simple too! I started using this recipe for my white cake cupcakes a few years ago, I think I found the recipe online (not sure where exactly), but it’s a winner!
White Cake Recipe (from scratch)
1 cup (2 sticks) butter, softened
½ cup vegetable shortening
3 cups granulated sugar
5 eggs, room temperature
3 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
½ cup whole milk, room temperature
½ cup buttermilk, room temperature
2 teaspoons vanilla extract
*The 1/2 cup buttermilk can be substituted for 1 cup whole milk.
Preheat oven to 350º F. Grease (4) 8-inch round baking pans (I recommend baking 2 at a time…I only had one pan so you can imagine the process I went through, lol).
Cream together butter and shortening until light and fluffy with an electric mixer. Slowly add sugar one cup at a time, making sure to fully incorporate each cup before adding another. Add eggs one at a time, making sure to fully incorporate each egg before adding another.
Sift together flour, baking powder, and salt. Pour milks and vanilla into measuring cup and whisk together with a fork. Add to butter and shortening mixture alternately with milk mixture, beginning and ending with dry ingredients.
Gently stir all ingredients until well combined. Stop mixer and scrape down sides and bottom of bowl, making sure to have all ingredients mixed well.
Evenly distribute cake batter between cake pans and place pans into oven. Bake for 25-30 minutes, or until a toothpick or cake tester inserted in the center comes out clean. Remove and allow to cool slightly in cake pans for about 5 minutes, then cool completely on a wire rack.
Frost and garnish cake as desired.
White Cake Recipe (Short-cut version)
2 boxes Betty Crocker SuperMoist cake mix (any flavor, I used white)
Water, vegetable oil and eggs as called for on cake mix boxes
2 containers Betty Crocker frosting (I used the Buttercream)
Heat oven to 350°F. Grease or spray (4) 8-inch round pans (again, I recommend baking 2 at a time). In large bowl, beat 1 box cake mix and ingredients called for on box with electric mixer on low speed 30 seconds, then on high speed about 2 minutes or until smooth. Spread in pans. Bake as directed on box. Cool 10 minutes; run knife around sides of pans to loosen cakes. Gently remove from pans to cooling rack. Cool completely, about 30 minutes. Repeat to make 2 more layers.
To assemble the cake:
Place 1 uncut cake layer on cake stand or serving platter (rounded side down, or cut flat); spread frosting on top (being careful to leave the center unfrosted). Top with the second layer which has the center removed and spread frosting on top. Top with a third layer with center removed and spread frosting on top. Fill cake with candies and candy sprinkles of your choice. Gently press candies to level, top with full cake layer and frost the side and top of cake using remaining frosting.
